When the concept was discussed the idea was that the beer should be something Scottish as well as something Brooklyn. Scotch Ale was a style that was decided on, using “a wee bit” of Scottish honey, treacle & peated malt, all brought together and fermented with a Brooklyn yeast.

Back in the 9th Century, elderberry black ale was part of the Celtic festivals.Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries. Heather ale is probably the oldest style of ale still produced in the world, with sweet gale and flowering heather added to the boil. A light amber ale with floral peaty aroma, full malt charachter, a spicy herbal flavour and dry wine like finish. *Multi Award Winner*

Ginger - Golden - 3.8%
This is a traditional alcoholic ginger beer with a distinctly adult taste. Brewed using malted barley and wheat, it has a recognisably 'beery' flavour although it contains NO hops. We use loads of fresh root ginger, some lemons and a small amount of organic cane sugar along with the malts... and that's it.

A refreshing and full bodied sparkling golden ale, brewed using a blend of seven malts. Undertones of vanilla and fruit are offset by the citrus aroma of fresh hops, suggesting grapefruit and orange.

The Tayberry is a cross between a raspberry & a blackberry, originally grown in the Tay region of Scotland. Roisin (pronounced Rosheen) tastes of all the good things a micro-brewed beer should (malt & hops) but with a distinct, delicate fruit aroma. Oh, and it’s pink! It is best enjoyed chilled, but not freezing cold, otherwise we are wasting time making it so flavoursome!
